Grilled Pineapple with Rum-Lime Glaze

INGREDIENTS:
- 1 ripe pineapple, peeled, cored and cut into thick rings or spears
- 2 tbsp Tropical Vibes Dark Rum
- Juice of 1 lime
- 1 tbsp brown sugar
INSTRUCTIONS:
- Preheat grill to medium-high (or use a cast iron pan, like this one, if you're indoors)
- In a small bowl, stir together the rum, lime juice and brown sugar until dissolved
- Thread pineapple onto skewers (we love these OXO skewers for fruit and small bites)
- Brush the glaze over each piece of pineapple
- Grill pineapple for 2-3 minutes per side - until caramelized and marked
- Brush with more glaze before serving. That's it.
HOW TO SERVE:
- Over vanilla ice cream
- On top of pulled pork or chicken
- Diced into salsa for fish tacos
- Straight off the skewer
